Well Autumn season is well and truly in full swing! Today it’s Halloween and as I look outside to the falling brown leaves, I’m feeling inspired by all of the warm, seasonal colours. From deep browns to oranges, stone and even those deep reds, the colours are beautiful. I love this time of the year, don’t you?

In my kitchen today I’m preparing a recipe given to me by the wonderful Bexology. If you haven’t heard of her, go check out her website it’s full of wonderful recipes that are really good for you.

My kitchen is the heart of my home. It’s a place where my family gather to talk, eat and relax, probably just like yours. Whenever something is cooking, someone is always appearing out of no where to see what’s going on. I’m a relatively healthy eater and a big fan of using seasonal flavours so this recipe is a winner enjoyed by everyone in our home.It really does give you lots of energy, without the crash.

Seasonal Pumpkin Matcha Latte

Energy without the crash.
Ingredients

2.5 cups hot water

1/3 cup raw cashews

2-3 teaspoons coconut palm sugar

2 teaspoons matcha powder

1 teaspoon pumpkin pie spice 

1/2 teaspoon vanilla

Method: Blend all of the ingredients in a blender (that is suitable for hot liquid)

Heart healthy monounsaturated fats from the cashews give a dose of healthy fats and make the latte lovely and creamy. The cashew milk is also super easy to make at home. Cashews are full of copper to help fight free radicals and play a part in the production of collagen for healthy skin and joints.

For the creamiest possible texture soak the cashews for 2hrs-overnight but if you’re in a rush soak for 10-30 mins in hot very water.
